History of Sushi Akazu

A boy who loved sushi since his childhood became a sushi-loving man, eating more than 500 servings of sushi a year all over Japan. This sushi gourmand became known as a “Sushi Sennin (a wise man of sushi)” in the sushi industry. With the spread of the Internet, the Sushi Sennin quickly gained tens of thousands of followers who love sushi when he introduced his favorite sushi restaurants and sushi dishes on famous blog services and social networking services. And, he became so influential that it was hard to book a table at the restaurants that he introduced.

The Sushi Sennin was asked by many of his followers to create the best sushi restaurant, so he opened “Sushi Akazu”, a sushi restaurant where it is easy to eat at, with the concept of not being particular about the restaurant's interior design or serving utensils and not reflecting the restaurant's operating costs in the prices.

Then, because many sushi lovers from all over the country rushed to the restaurant and it became a sushi restaurant where it was impossible to make a reservation, the Sushi Sennin opened the branch stores of “Sushi Akazu” so that more people can have their sushi at their home or workplace.

Sushi Akazu has been thriving today with the support of sushi lovers. We believe that this is due to the pure desire of people who want to eat delicious sushi. The Sushi Akazu Group will continue to put effort into being a restaurant that is loved by many sushi lovers.

Today, the Sushi Sennin has left the management of Sushi Akazu and is now exploring the world, dreaming of expanding the Japanese tradition of sushi to the world.

WE SERVE with Akazu (Red Vinegar),

We use Akazu which has aged carefully selected sake lees for more than 10 years and is full of amino acids and organic acids. This special Akazu, designed only for “Sushi Akazu” is made with a traditional method used since the Edo Period (1603 - 1868), enhances the excellent umami of Shari (vinegared rice).

WE MAKE Our Original Blend Shari

We mix different types of rice and adjust moisture content to make a proprietary blend of “Sushi Akazu”. The mouthfeel and umami of Shari mixed with Akazu changes to a fine and luxurious taste in the mixture of umami from seasonal seafood such as tuna or sea urchin. Our Shari is addictively delicious.

WE BRING The Best Ingredients at Your Fingertips

Each Sushi Akazu store procures ingredients such as seafood served at the finest sushi restaurants from fishermen and local producers or from market brokers that have established a relationship of trust with us, and who are able to discern quality ingredients. We, the Sushi Akazu Group, also offer high-end seafood at a reasonable price by making bulk purchases of ingredients.

WE COLLECT Wasabi from Renowned Wasabi-Producing Areas Throughout Japan

We purchase select fresh and flavorful wasabi from famous wasabi-producing areas throughout Japan by evaluating the weather and the growth of the wasabi each year. It is an indispensable supporting ingredient for delicious sushi.

WE USE Rare Soy Sauce

We use soy sauce brewed in wooden buckets which has a limited distribution. Please scrutinize the taste of soy sauce produced in areas with a mild climate and suitable for koji fermentation with our sushi. The tasty and aromatic soy sauce enhances the flavor of the ingredients and Shari.
